Stir-Fried Udon Noodles with Vegetables

Ingredients

  • 250 grams udon noodles
  • 2 carrots
  • 1 bunch broccolini
  • 2 garlic cloves
  • 1/2 teaspoon schezwan pepper
  • 4 spring onions
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon sesame seeds
  • 1.5 tablespoons tamari sauce
  • 1.5 tablespoons maple syrup
  • 1 tablespoon corn flour

Preparation

  1. Prepare the sauce by adding the tamari sauce, maple syrup and corn flour in a bowl and mix well. Set aside.

  2. In a fry pan add the oil, leek, garlic, salt, pepper and sauté for a few minutes. Add the sliced carrots and cook for five minutes or until slightly tender. Add the broccolini, prepared Tamari sauce, spring onions and combine well. Set aside.

  3. Cook your udon noodles as per instructions then toss the noodles in the prepared mixture. Top with sesame seeds when ready to serve.
