Vegan Beef Satay Stir-Fry with Noodles

Ingredients

Satay sauce

  • 1/2 tin coconut milk
  • 1 tbsp curry powder
  • 1 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • pinch of salt
  • dash of lemon juice

Stir-fry components

  • broccoli
  • onion
  • ginger
  • green pepper
  • garlic
  • mock beef (vegan substitute)

Accompaniments

  • rice noodles
  • no duck spring rolls (vegan)

Preparation

Satay sauce

  1. Put all the satay sauce ingredients into a pan and heat while stirring until it simmers.

  2. Simmer on a low heat until the sauce darkens and thickens.

  3. If the sauce is too thick, add a dash of hot water.

Stir-fry

  1. Heat oil in a skillet over medium heat.

  2. Add garlic and ginger and stir-fry for about 1 minute.

  3. Add onion, green pepper, and broccoli and cook until slightly softened.

  4. Add mock beef and cook until heated through.

  5. Pour in the satay sauce and stir to coat the ingredients.

  6. Cook for another 2-3 minutes until well combined.

Noodle and assembly

  1. Cook rice noodles according to package instructions.

  2. Serve the stir-fry over the rice noodles and accompany with no duck spring rolls, heated as per package directions if desired.
