Battered Green Jackfruit Vegan Fish
Ingredients
- 1 can of young green jackfruit
- 2 tbsp white vinegar
- 1 tbsp liquid from a jar of capers
- 1 tbsp lemon juice
- 1 cup all-purpose flour
- 1 tbsp cornstarch
- 310 ml of a cold beer
- 1 teaspoon onion powder
- 1 tsp garlic powder
- 1/2 tsp seasoning salt
- 1 tsp old bay seasoning
- 1 tbsp paprika
- 1/2 tsp black pepper
- 10g seaweed flakes
- 2 rice paper sheets
- Lemon wedges for garnish
Preparation
Drain and shred the jackfruit, then marinate it with vinegar, caper liquid, and lemon juice for at least 15 minutes.
Blend the seaweed into fine flakes.
In a bowl, mix flour, cornstarch, onion powder, garlic powder, seasoning salt, old bay seasoning, paprika, black pepper, and seaweed flakes.
Add cold beer to the dry mixture to form a smooth batter.
Cut rice paper into pieces and wrap around the marinated jackfruit to shape like fish fillets.
Heat oil in a deep fryer or pan to medium-high heat.
Dip the wrapped jackfruit in the batter and fry until golden brown and crispy, about 3-5 minutes per side.
Remove from oil, drain on paper towels, and serve with lemon wedges.
