Crispy Vegan Cauliflower Wings
Ingredients
- 1 small head of cauliflower
- 4 cups oil (for deep frying)
Marinade
- 1 cup soy milk
- 1 tbs apple cider vinegar
- 1 tbs salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1 1/2 tbs sriracha sauce
- 1 1/2 tbs soy sauce
Dry coating
- 1/2 cup all-purpose flour
- 1/4 cup corn starch
- 1/4 cup corn flakes
- 1/2 tsp salt
Preparation
Wash and cut the cauliflower into large florets. In a bowl, mix soy milk and apple cider vinegar and wait a minute; it will curdle slightly.
Add salt, paprika, garlic powder, sriracha sauce, and soy sauce to the marinade mixture.
Add the cauliflower florets to the batter and let them marinate for 2 to 3 hours; marinating overnight is better.
In another bowl, combine all-purpose flour, corn starch, slightly crushed corn flakes, and salt.
After marination, strain the liquid from the cauliflower. Dip each floret in the marinade, then toss in the dry coating, repeat the process, and place on a plate.
Heat oil in a pan or fryer. Carefully add the cauliflower florets one by one. Do not stir until the coating stiffens, then gently turn with tongs. Deep fry until golden and crispy, about 3 to 4 minutes.
Mix equal amounts of vegan mayonnaise and sriracha sauce to make a dip and serve with the crispy cauliflower wings.
