Fresh Black Eyed Pea Salsa with Lime Dressing

Ingredients

  • 1/2 medium red onion, diced
  • 1 green or red bell pepper (I used half of each variety), diced
  • 1 large jalapeño, seeds removed, and minced
  • 1 (15oz) can no salt added petite diced tomatoes, drained of juice
  • 1 (15 oz) can black eyed peas, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen yellow corn

Dressing

  • 1/4 cup olive oil
  • The juice of one lime
  • 2 tablespoons red wine vinegar
  • 1 teaspoon agave or cane sugar
  • 1 tablespoon dried cilantro (or use fresh to taste)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Preparation

  1. Combine all ingredients except for the dressing in a large bowl.

  2. Whisk the dressing ingredients together in a separate bowl.

  3. Pour the dressing over the ingredients and stir to combine.

  4. Cover and refrigerate for at least one hour before serving with tortilla chips.

  5. This recipe makes a large batch and can be enjoyed for several days.
