Fresh Black Eyed Pea Salsa with Lime Dressing
Ingredients
- 1/2 medium red onion, diced
- 1 green or red bell pepper (I used half of each variety), diced
- 1 large jalapeño, seeds removed, and minced
- 1 (15oz) can no salt added petite diced tomatoes, drained of juice
- 1 (15 oz) can black eyed peas, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen yellow corn
Dressing
- 1/4 cup olive oil
- The juice of one lime
- 2 tablespoons red wine vinegar
- 1 teaspoon agave or cane sugar
- 1 tablespoon dried cilantro (or use fresh to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Preparation
Combine all ingredients except for the dressing in a large bowl.
Whisk the dressing ingredients together in a separate bowl.
Pour the dressing over the ingredients and stir to combine.
Cover and refrigerate for at least one hour before serving with tortilla chips.
This recipe makes a large batch and can be enjoyed for several days.
