Black Eyed Pea Salsa

Ingredients

  • 1/2 medium red onion, diced
  • 1 green or red bell pepper (i used half of each variety), diced
  • 1 large jalapeño, seeds removed, and minced
  • 1 (15oz) can no salt added petite diced tomatoes, drained of juice
  • 1 (15 oz) can black eyed peas, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen yellow corn
  • for the dressing:
  • 1/4 cup olive oil
  • the juice of one lime
  • 2 tablespoons red wine vinegar
  • 1 teaspoon agave or cane sugar
  • 1 tablespoon dried cilantro (or use fresh to taste)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Preparation

  1. Ombine all of the ingredients (except for the dressing) in a large bowl. Whisk dressing ingredients together in a separate bowl and pour over top, then stir to combine. Cover and let sit in the fridge for at least an hour before serving with tortilla chips
