Black Eyed Pea Salsa
Ingredients
- 1/2 medium red onion, diced
- 1 green or red bell pepper (i used half of each variety), diced
- 1 large jalapeño, seeds removed, and minced
- 1 (15oz) can no salt added petite diced tomatoes, drained of juice
- 1 (15 oz) can black eyed peas, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen yellow corn
- for the dressing:
- 1/4 cup olive oil
- the juice of one lime
- 2 tablespoons red wine vinegar
- 1 teaspoon agave or cane sugar
- 1 tablespoon dried cilantro (or use fresh to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Preparation
Ombine all of the ingredients (except for the dressing) in a large bowl. Whisk dressing ingredients together in a separate bowl and pour over top, then stir to combine. Cover and let sit in the fridge for at least an hour before serving with tortilla chips
