Creamy Tomato Cashew Rigatoni

Ingredients

  • 1 tsp avocado oil
  • 1/2 of an onion
  • 3 minced garlic cloves
  • 2 cups cherry tomatoes
  • 1 tsp salt
  • 2/3 cup raw cashews
  • 1/3 cup water
  • 1/2 cup fresh basil, chopped
  • 2 cups cooked rigatoni
  • Nutritional yeast (optional)

Preparation

  1. In a medium pot, cook the onion in the avocado oil (or other oil with a high smoke point) for 5 minutes. Add the garlic and cook an additional minute

  2. Add the tomatoes and salt, and cook for 5 minutes. Move to the blender, add the cashews and water, and blend until smooth. Return to the pot and add the basil. Cook for a minute, then serve with the rigatoni. Top with nooch and enjoy
