Creamy Tomato Cashew Rigatoni
Ingredients
- 1 tsp avocado oil
- 1/2 of an onion
- 3 minced garlic cloves
- 2 cups cherry tomatoes
- 1 tsp salt
- 2/3 cup raw cashews
- 1/3 cup water
- 1/2 cup fresh basil, chopped
- 2 cups cooked rigatoni
- Nutritional yeast (optional)
Preparation
In a medium pot, cook the onion in the avocado oil (or other oil with a high smoke point) for 5 minutes. Add the garlic and cook an additional minute
Add the tomatoes and salt, and cook for 5 minutes. Move to the blender, add the cashews and water, and blend until smooth. Return to the pot and add the basil. Cook for a minute, then serve with the rigatoni. Top with nooch and enjoy
