Fall Vegetable Hash with Bacon and Apple

Ingredients

  • 1/2 lb brussels sprouts
  • 1 delicata squash
  • 2 tablespoons coconut oil or brown butter ghee
  • salt and pepper to taste
  • 1/4 lb bacon
  • 1 small sweet onion
  • 1 small Granny Smith apple
  • cinnamon or 6 fresh sage leaves

Preparation

  1. Preheat oven to 400F. Toss 1/2 lb quartered brussels sprouts and 1 delicata squash that has been deseeded and sliced 1/4 inch thick in 2 tablespoons coconut oil or brown butter ghee. Sprinkle with salt and pepper and roast for 30-40 minutes.

  2. In a deep pan, cook 1/4 lb sliced bacon until crisp.

  3. Remove bacon and add 1 small sweet onion that has been finely chopped. Cook until brown, about 10 minutes.

  4. Add 1 small Granny Smith apple that has been diced. Cook about 3 minutes or until soft.

  5. Sprinkle with cinnamon or add 6 fresh sage leaves.

  6. Once cooked, combine with bacon, brussels sprouts and squash. Stir to combine.
