Healthy Homemade Baked Carrot Taco Shells

Ingredients

  • 1 1/2 cup grated carrot, packed (about 200 g)
  • 1/2 cup tap water
  • 1/2 cup grated vegan cheese (cheddar, 75g)
  • 2 flax eggs (2 tbsp flaxseed mixed with water)
  • 3 tablespoons almond flour or oat flour
  • 1/4 teaspoon salt (optional)

Preparation

  1. Preheat oven to 200C. Wash, peel, and grate carrots well. Prepare flax egg by mixing 2 tbsp flaxseed with water and letting it sit.

  2. Place grated carrots in a bowl with 1/2 cup water and microwave for 2-3 minutes. Drain and squeeze out excess water using paper towel.

  3. Mix carrots with flax eggs, almond flour, vegan cheese, salt, and pepper in a bowl.

  4. Divide batter into 5 portions and press each into a flat circle on a lined baking tray, spacing them well.

  5. Bake for 15 minutes or until crispy. Add desired fillings.
