Mung Bean Sweet Potato Patties

Ingredients

  • 3 medium sweet potatoes
  • 2 cups cooked mung beans
  • 1 small onion, finely diced
  • 1 serrano pepper, finely diced
  • 1 tablespoon grated ginger
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoons garam masala
  • 2 tablespoons neutral oil
  • handful chopped cilantro
  • 4 tablespoons chickpea flour
  • salt to taste

Preparation

  1. Peel 3 medium sweet potatoes and cut into approximately 1/2-inch pieces.

  2. Boil and mash the sweet potatoes.

  3. In a large bowl, mix the mashed sweet potatoes with 2 cups cooked mung beans, 1 small onion finely diced, 1 serrano pepper finely diced, 1 tablespoon grated ginger, 1 teaspoon chili powder, 1 teaspoon ground cumin, 2 teaspoons garam masala, 2 tablespoons neutral oil, a handful of chopped cilantro, 4 tablespoons chickpea flour, and salt to taste.

  4. Mix until well combined.

  5. Form the mixture into patties.

  6. Either pan fry or bake on a parchment-lined baking sheet at 400°F until golden brown, about 20-25 minutes, flipping halfway.

  7. Serve with avocado, homemade spicy ketchup, or on a burger bun with vegetables of choice.

  8. Tip: You can substitute lentils for the mung beans.
