Mung Bean Sweet Potato Patties
Ingredients
- 3 medium sweet potatoes
- 2 cups cooked mung beans
- 1 small onion, finely diced
- 1 serrano pepper, finely diced
- 1 tablespoon grated ginger
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoons garam masala
- 2 tablespoons neutral oil
- handful chopped cilantro
- 4 tablespoons chickpea flour
- salt to taste
Preparation
Peel 3 medium sweet potatoes and cut into approximately 1/2-inch pieces.
Boil and mash the sweet potatoes.
In a large bowl, mix the mashed sweet potatoes with 2 cups cooked mung beans, 1 small onion finely diced, 1 serrano pepper finely diced, 1 tablespoon grated ginger, 1 teaspoon chili powder, 1 teaspoon ground cumin, 2 teaspoons garam masala, 2 tablespoons neutral oil, a handful of chopped cilantro, 4 tablespoons chickpea flour, and salt to taste.
Mix until well combined.
Form the mixture into patties.
Either pan fry or bake on a parchment-lined baking sheet at 400°F until golden brown, about 20-25 minutes, flipping halfway.
Serve with avocado, homemade spicy ketchup, or on a burger bun with vegetables of choice.
Tip: You can substitute lentils for the mung beans.
