Nasturtium Infused Vinegar with Flowers and Herbs

Ingredients

  • 1 cup nasturtium
  • 1/4 cup nasturtium leaves
  • 2 cups white wine vinegar
  • Any other herbs (optional, e.g., rosemary)

Preparation

  1. Place flowers, leaves, and any other herb in a jar.

  2. Add vinegar.

  3. Cover with lid - if it’s metal, put a piece of parchment or wax paper in between.

  4. Steep for 2–3 weeks.

  5. Strain through a fine mesh strainer.

  6. Store in a cool, dark place.

  7. Keep a few flowers in the bottle and leave it on the table at your dinner party as a substitute for balsamic vinegar.
