Nasturtium Infused Vinegar with Flowers and Herbs
Ingredients
- 1 cup nasturtium
- 1/4 cup nasturtium leaves
- 2 cups white wine vinegar
- Any other herbs (optional, e.g., rosemary)
Preparation
Place flowers, leaves, and any other herb in a jar.
Add vinegar.
Cover with lid - if it’s metal, put a piece of parchment or wax paper in between.
Steep for 2–3 weeks.
Strain through a fine mesh strainer.
Store in a cool, dark place.
Keep a few flowers in the bottle and leave it on the table at your dinner party as a substitute for balsamic vinegar.
