Oven-Baked Sweet Potato Fries and Scrambled Tofu

Ingredients

  • sweet potatoes
  • 2 tomatoes
  • 2 cayenne peppers
  • 3 cubes of tofu
  • onions
  • garlic
  • cumin seeds
  • sesame seed oil
  • hot curry powder
  • garlic powder
  • coriander powder
  • turmeric powder
  • paprika
  • chili flakes
  • cabbage
  • carrots
  • green beans
  • green bell pepper
  • cayenne pepper
  • oil (for baking)

Preparation

  1. Preheat oven to 200°C

  2. Cut sweet potatoes into fry shapes and toss with oil and turmeric

  3. Bake sweet potato fries until crispy, about 25-30 minutes

  4. In a pan, heat sesame seed oil over medium heat

  5. Sauté onions and garlic until fragrant

  6. Add cumin seeds, hot curry powder, garlic powder, coriander powder, turmeric powder, paprika, and chili flakes; stir to combine

  7. Add chopped tomatoes and cayenne peppers; cook until softened

  8. Crumble tofu and add to the pan with prepped baked veggies; scramble until heated through
