Vegan Baked Portobello Mushroom Bacon

Ingredients

  • 8 large portobello mushrooms
  • 1/4 cup olive oil
  • 1 teaspoon salt

Preparation

  1. Slice 8 large portobello mushrooms into uniform strips, 1/4-1/2 inch wide.

  2. Add mushroom strips to a baking sheet and gently toss with 1/4 cup olive oil and 1 teaspoon salt.

  3. Spread strips out evenly on the baking sheet, overlapping is fine.

  4. Bake at 425 degrees Fahrenheit for 20 minutes.

  5. Gently toss the mushroom strips and spread into a single layer.

  6. Continue baking for another 20-25 minutes.

  7. Allow to cool slightly before eating.
