Pulled Jackfruit Sandwiches with Coleslaw

Ingredients

Pulled jackfruit

  • 1 jar/340g Jackfruit (@jackyf.jackfruit) *werbung
  • 100g Ketchup
  • 40 ml soy sauce
  • 100 ml water
  • 1 tsp smoked paprika (or 1/4 tsp liquid smoke)
  • 1/8 tsp ground pepper
  • 1/4 tsp garlic powder
  • 1 tbsp red wine vinegar
  • 1 tsp maple syrup

Additional

  • 2-4 baguettes for serving

Coleslaw

  • 1 small head cabbage (I usually do 1/2 purple, 1/2 white)
  • 3 carrots
  • 2 tbsp vegan mayo
  • 1/2 tbsp agave nectar
  • 150g soy yogurt (skyr style)
  • 2 tbsp apple cider vinegar
  • 2 tsp whole grain mustard
  • salt & pepper to taste

Preparation

  1. Mix together all ingredients except cabbage and carrots to make a sauce.

  2. Slice the cabbage thinly using a knife and shred the carrots using a 4-sided grinder, then add them to a large bowl.

  3. Add the sauce to the vegetables and mix together well, best when chilled overnight but can be eaten right away.

  4. Drain the jackfruit and add it to a small pot with all other ingredients.

  5. Cook on medium heat until the liquid is gone, about 10 minutes.

  6. Pull the jackfruit apart using a fork, season to taste, and serve in a sandwich together with the coleslaw.
