Pulled Jackfruit Sandwiches with Coleslaw
Ingredients
Pulled jackfruit
- 1 jar/340g Jackfruit (@jackyf.jackfruit) *werbung
- 100g Ketchup
- 40 ml soy sauce
- 100 ml water
- 1 tsp smoked paprika (or 1/4 tsp liquid smoke)
- 1/8 tsp ground pepper
- 1/4 tsp garlic powder
- 1 tbsp red wine vinegar
- 1 tsp maple syrup
Additional
- 2-4 baguettes for serving
Coleslaw
- 1 small head cabbage (I usually do 1/2 purple, 1/2 white)
- 3 carrots
- 2 tbsp vegan mayo
- 1/2 tbsp agave nectar
- 150g soy yogurt (skyr style)
- 2 tbsp apple cider vinegar
- 2 tsp whole grain mustard
- salt & pepper to taste
Preparation
Mix together all ingredients except cabbage and carrots to make a sauce.
Slice the cabbage thinly using a knife and shred the carrots using a 4-sided grinder, then add them to a large bowl.
Add the sauce to the vegetables and mix together well, best when chilled overnight but can be eaten right away.
Drain the jackfruit and add it to a small pot with all other ingredients.
Cook on medium heat until the liquid is gone, about 10 minutes.
Pull the jackfruit apart using a fork, season to taste, and serve in a sandwich together with the coleslaw.
