Pulled Jackfruit Sandwiches with Coleslaw

Ingredients

  • 1 jar/340g jackfruit
  • 100g ketchup⠀
  • 40 ml soy sauce⠀
  • 100 ml water⠀
  • 1/8 tsp ground pepper⠀
  • 1/4 tsp garlic powder⠀
  • 1 tbsp red wine vinegar⠀
  • 1 tsp maple syrup⠀
  • 2-4 baguettes for serving⠀

Preparation

  1. Drain Jackfruit and add to a small pot. Add all other ingredients and let it cook on medium heat until the liquid is gone - about 10 minutes. ⠀

  2. Pull the Jackfruit apart using a fork. Season to taste and serve in a sandwich together with the coleslaw.⠀

  3. For the coleslaw: 1 small head cabbage (I usually do 1/2 purple, 1/2 white), 3 carrots, 2 tbsp vegan mayo, 1/2 tbsp agave nectar, 150g soy yogurt (skyr style), 2 tbsp apple cider vinegar, 2 tsp whole grain mustard, salt & pepper to taste

  4. Mix together all ingredients except cabbage and carrots to a sauce.⠀

  5. Slice the cabbage thinly using a knife. Shred carrots using a 4 sided grinder. Add it to a large bowl.⠀

  6. Now add the sauce and mix together well. Best when chilled overnight but can also be eaten right away.⠀
