Quinoa Chickpea Burgers with Avocado and Tomato
Ingredients
- 1 onion, diced
- 1 inch of ginger, diced
- 2-3 cloves of garlic, diced
- 1 red chilli, de-seeded and diced
- 1 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1 cup of cooked quinoa
- 2 cups chickpeas, mashed
- 1/4 cup roasted ground cashews
- 1/2 cup chickpea flour
Preparation
Mix all ingredients together in a food processor.
Form the mixture into patties.
Bake the patties in the oven at 350 degrees for 30 minutes.
Serve on a toasted bun with tomato slices, romaine lettuce, and avocado.
