Quinoa Chickpea Burgers with Avocado and Tomato

Ingredients

  • 1 onion, diced
  • 1 inch of ginger, diced
  • 2-3 cloves of garlic, diced
  • 1 red chilli, de-seeded and diced
  • 1 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1 cup of cooked quinoa
  • 2 cups chickpeas, mashed
  • 1/4 cup roasted ground cashews
  • 1/2 cup chickpea flour

Preparation

  1. Mix all ingredients together in a food processor.

  2. Form the mixture into patties.

  3. Bake the patties in the oven at 350 degrees for 30 minutes.

  4. Serve on a toasted bun with tomato slices, romaine lettuce, and avocado.
