Roast a Bunch of Veggies
Ingredients
- 1 cutting board
- 1 knife
- 1 bowl
- 1 spoon/utensil to mix
- 1 parchment-lined baking tray
- Veggies of choiceOlive oil
- Your fav spices (mine are salt, onion powder & cinnamon)
Preparation
Here's what I did today with sweet potatoes, parsnips & Brussels.Preheat oven to 400 degrees
Line a baking sheet with parchment paper.Scrub sweet potato. Slice & add to bowl. Mix with olive oil, spices. Place on baking sheet
Peel parsnips. Repeat step above.Chop Brussels. Repeat step above (plus add some coconut aminos if you're feeling adventurous)
Roast at 400 for 25-30 minutes until done.Pat yourself on the back, you veggie-eating queen
