Simple Cabbage and Plant-Based Bacon Stir-Fry

Ingredients

  • Half of a medium sized cabbage, finely chopped
  • 1 small onion, finely diced
  • 1 small tomato, finely diced
  • 175g or 6oz plant-based bacon, already chopped or cut in small pieces
  • 1 tsp apple cider vinegar, for taste to reduce salt and add tangy flavor
  • 4 tbsp olive oil or coconut oil

Preparation

  1. Heat oil in frying pan.

  2. Add bacon and cook for a few minutes.

  3. Add onion and chilli pepper if using.

  4. Add cabbage and cook until tender.

  5. Add vinegar and black pepper.

  6. Serve with yam, sweet potatoes, or dumplings of your choice.
