Split Peas and Broccoli Fritters

Ingredients

  • 1 small broccoli head, cut into florets
  • 1 cup cooked split peas
  • 1 large carrot grated
  • 1 tablespoon nutritional yeast
  • 2 tablespoons chickpea flour
  • 1 egg or flax-seed egg mixture
  • a few leaves fresh basil, chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • salt and pepper, to taste
  • olive oil, for frying
  • sour cream and fresh parsley, for serving

Preparation

  1. Place all the ingredients into a food processor and pulse until the mixture comes together and forms a sticky paste.

  2. Form fritters with your hands and fry for about 3 minutes on both sides until golden brown.

  3. Serve immediately with sour cream and parsley. Enjoy!
