Split Peas and Broccoli Fritters
Ingredients
- 1 small broccoli head, cut into florets
- 1 cup cooked split peas
- 1 large carrot grated
- 1 tablespoon nutritional yeast
- 2 tablespoons chickpea flour
- 1 egg or flax-seed egg mixture
- a few leaves fresh basil, chopped
- 1 teaspoon oregano
- 1/2 teaspoon cumin
- salt and pepper, to taste
- olive oil, for frying
- sour cream and fresh parsley, for serving
Preparation
Place all the ingredients into a food processor and pulse until the mixture comes together and forms a sticky paste.
Form fritters with your hands and fry for about 3 minutes on both sides until golden brown.
Serve immediately with sour cream and parsley. Enjoy!
