Super Green Pasta with Roasted Veggies

Ingredients

  • 300g spinach
  • 250ml unsweetened soya milk
  • 4 garlic cloves
  • 1 teaspoon butter
  • nutritional yeast
  • lemon juice
  • salt and pepper
  • 2 courgettes
  • 1 pack mushrooms
  • 1 broccoli
  • 300g peas
  • brown pasta for 4 portions

Preparation

  1. Wilt 300g of spinach with 250ml of unsweetened soya milk.

  2. Add the wilted mixture to a blender with 4 roasted garlic cloves, 1 teaspoon of butter, nutritional yeast, a splash of lemon juice, and salt and pepper; blend until smooth.

  3. Roast 2 courgettes, a pack of mushrooms, and a broccoli in an air fryer.

  4. Boil 300g of peas.

  5. Cook 4 portions of brown pasta.

  6. Mix all the prepared ingredients together and serve.
