Super Green Pasta with Roasted Veggies
Ingredients
- 300g spinach
- 250ml unsweetened soya milk
- 4 garlic cloves
- 1 teaspoon butter
- nutritional yeast
- lemon juice
- salt and pepper
- 2 courgettes
- 1 pack mushrooms
- 1 broccoli
- 300g peas
- brown pasta for 4 portions
Preparation
Wilt 300g of spinach with 250ml of unsweetened soya milk.
Add the wilted mixture to a blender with 4 roasted garlic cloves, 1 teaspoon of butter, nutritional yeast, a splash of lemon juice, and salt and pepper; blend until smooth.
Roast 2 courgettes, a pack of mushrooms, and a broccoli in an air fryer.
Boil 300g of peas.
Cook 4 portions of brown pasta.
Mix all the prepared ingredients together and serve.
