Wholewheat Noodles with Mushrooms and Broccoli Stir-Fry

Ingredients

  • 1 nest of wholewheat noodles
  • 1 tbsp olive oil
  • 1 sprig rosemary
  • 5 large chestnut mushrooms
  • 2 garlic cloves sliced
  • 1 head broccoli chopped
  • 1 tbsp soy sauce
  • 2 tbsp oat milk
  • 2 heaped tbsp hummus
  • 1 heaped tbsp nutritional yeast
  • Pinch of salt
  • Lots of black pepper
  • Handful of fresh parsley chopped
  • Large handful of spinach

Preparation

  1. Cook the noodles as per package instructions, drain, rinse in cold water, and set aside. Give them a quick rinse with boiling water before adding to the mixture.

  2. Add the mushrooms, garlic, broccoli, and rosemary to a non-stick pan with the oil on medium heat. Let cook for 3 minutes, then stir.

  3. Add soy sauce, oat milk, nutritional yeast, hummus, salt, and pepper, and mix through.

  4. Add parsley and spinach, allow to wilt for 1 minute while mixing through, then add the cooked noodles, mix everything through, and serve.

  5. Optionally, serve with avocado and top with sesame seeds.
