Cheesy Penne with Cherry Tomatoes Spinach Broccoli
Ingredients
- Chickpea penne
- Cherry tomatoes
- Spinach
- Onions
- Broccoli
- Plant-based ricotta
- Olive oil
- Minced garlic
- Salt and pepper
Preparation
Steam cherry tomatoes, onion, and spinach in a pan with a splash of water. Once tender, add olive oil and minced garlic and sauté.
Cook pasta and, once done, drain and reserve about 1/3 to 1/2 cup of the pasta water.
Put penne in the pan with the other ingredients and lower the heat to a simmer.
Add the ricotta and a little bit of the water at a time until desired consistency. Drizzle with olive oil and add salt and pepper.
