Vegan Cheesy Penne with Cherry Tomatoes and Greens

Ingredients

  • chickpea penne
  • cherry tomatoes
  • spinach
  • onions
  • broccoli
  • plant-based ricotta
  • olive oil
  • minced garlic
  • salt and pepper

Preparation

  1. Steam cherry tomatoes, onion, and spinach in a pan with a splash of water. Once tender, add olive oil and minced garlic and sauté

  2. Cook pasta and once done, drain and reserve about 1/3 to 1/2 cup of the pasta water

  3. Put penne in the pan with the other ingredients, lowering the heat to a simmer

  4. Add the ricotta and a little bit of the pasta water at a time until desired consistency. Drizzle with olive oil and add salt and pepper
