Vegan Cheesy Penne with Cherry Tomatoes and Greens
Ingredients
- chickpea penne
- cherry tomatoes
- spinach
- onions
- broccoli
- plant-based ricotta
- olive oil
- minced garlic
- salt and pepper
Preparation
Steam cherry tomatoes, onion, and spinach in a pan with a splash of water. Once tender, add olive oil and minced garlic and sauté
Cook pasta and once done, drain and reserve about 1/3 to 1/2 cup of the pasta water
Put penne in the pan with the other ingredients, lowering the heat to a simmer
Add the ricotta and a little bit of the pasta water at a time until desired consistency. Drizzle with olive oil and add salt and pepper
