Vegan Linguine with Caramelized Onions and Vegetables

Ingredients

  • 2-3 tbsp olive oil
  • 4 medium yellow onions
  • 2 cloves garlic
  • Big pinch chili flakes
  • Handful cherry tomatoes
  • Handful chestnut mushrooms
  • 1 can navy beans
  • Handful fresh basil
  • Handful spinach
  • Handful sprouts
  • 1/4 cup vegan butter
  • Sea salt and cracked pepper
  • Vegan Parmesan
  • Linguine pasta

Preparation

  1. Cook pasta and reserve 1/2 cup water.

  2. Add olive to a large pan over medium heat.

  3. Once oil is hot add onions.

  4. Cook over medium low heat for approx 30 minutes stirring frequently.

  5. Boil water and cook pasta.

  6. Reserve 1/2 cup water.

  7. Add garlic to softened onions, and season with salt and cracked pepper.

  8. Add mushrooms and 2 tbsp butter.

  9. Cook until mushrooms start to soften, add cherry tomatoes and beans.

  10. Cook until heated through and add spinach, sprouts, pasta and remaining 2 tbsp butter.

  11. Season again and toss well.

  12. Serve with cheese, more sprouts and chili flakes.
