Summer Pea and Herb Pasta
Ingredients
- 2 cups fresh or frozen peas
- 1-2 cloves garlic
- Handful fresh mint
- Handful fresh basil
- Juice of 1 lemon
- Sea salt and cracked pepper
- 1/4 cup olive oil
Preparation
Cook pasta according to package instructions.
Blanch peas in boiling salted water for 1.5 to 2 minutes and dunk them in an ice bath to retain color.
Add the blanched peas to a food processor with garlic, mint, basil, lemon juice, salt, and pepper.
With the processor running, slowly add olive oil.
Scrape the mixture into a large serving bowl and add the cooked pasta on top.
Tips
Dunking the peas in an ice bath helps retain their vibrant green color.
