Summer Pea and Herb Pasta

Ingredients

  • 2 cups fresh or frozen peas
  • 1-2 cloves garlic
  • Handful fresh mint
  • Handful fresh basil
  • Juice of 1 lemon
  • Sea salt and cracked pepper
  • 1/4 cup olive oil

Preparation

  1. Cook pasta according to package instructions.

  2. Blanch peas in boiling salted water for 1.5 to 2 minutes and dunk them in an ice bath to retain color.

  3. Add the blanched peas to a food processor with garlic, mint, basil, lemon juice, salt, and pepper.

  4. With the processor running, slowly add olive oil.

  5. Scrape the mixture into a large serving bowl and add the cooked pasta on top.

Tips

  1. Dunking the peas in an ice bath helps retain their vibrant green color.
