5 Minute Kale Pesto with Walnuts

Ingredients

  • 1/3 cup raw walnuts
  • 3 Tablespoons nutritional yeast
  • 1 clove garlic
  • 1 cup chopped kale
  • 1 cup fresh basil
  • 1/3 cup olive oil
  • Juice of one lemon
  • Pinch sea salt

Preparation

  1. Add walnuts, nutritional yeast and garlic to a food processor and pulse until finely chopped.

  2. Add kale, basil and lemon juice and pulse again until everything is very finely chopped.

  3. While food processor is running add olive oil in a steady stream, stopping to scrape down the sides once or twice.

  4. Add salt to taste.

Tips

  1. Use chopped Lacinto kale for a smoother blend and less bitterness.

  2. For a smoother pesto add more olive oil.

  3. Store in fridge or freeze in an ice cube tray for easy use later.
