Lemon Garlic Butter Pasta with Asparagus

Ingredients

  • 16 oz pasta of choice
  • 12 oz green asparagus
  • 3-4 tbsp vegan butter
  • 5 garlic cloves
  • 1 lemon

Seasonings

  • Sea salt
  • Freshly ground black pepper

Optional additions

  • Fresh or dried basil
  • Vegan parmesan

Preparation

  1. Prepare pasta according to package directions and reserve a cup of pasta water before draining.

  2. Cut asparagus into bite-sized pieces, discarding the woody ends, slice lemon, and finely mince garlic.

  3. Melt vegan butter in a large pan and add lemon slices. Fry them for a few minutes on both sides until golden, then set aside.

  4. Add asparagus and garlic to the pan and stir until garlic is golden and asparagus is tender. If asparagus is very thick, add garlic later to avoid burning.

  5. Toss everything with hot pasta, and add some pasta water if needed.

  6. Season to taste with sea salt and plenty of freshly ground black pepper.

Tips

  1. Optionally, top with fresh or dried basil and vegan parmesan.

  2. For a stronger lemon flavor, add additional lemon zest or juice.
