Vegan Linguine with Caramelized Onions and Vegetables

Ingredients

  • 2-3 tbsp olive oil
  • 4 medium yellow onions thinly sliced
  • 2 cloves garlic minced
  • Big pinch chili flakes
  • Handful cherry tomatoes
  • Handful chestnut mushrooms
  • 1 can navy beans rinsed well
  • Handful fresh basil roughly chopped
  • Handful spinach
  • Handful sprouts
  • 1/4 cup vegan butter
  • Sea salt and cracked pepper
  • Vegan Parmesan

Preparation

  1. Cook pasta and reserve 1/2 cup pasta water.

  2. Add olive oil to a large pan over medium heat.

  3. Once oil is hot, add onions.

  4. Cook onions over medium-low heat for approximately 30 minutes, stirring frequently.

  5. Add garlic to the softened onions and season with salt and cracked pepper.

  6. Add mushrooms and 2 tablespoons of butter.

  7. Cook until mushrooms start to soften, then add cherry tomatoes and beans.

  8. Cook until heated through, then add spinach, sprouts, pasta, and the remaining 2 tablespoons of butter.

  9. Season again and toss well.

  10. Serve with vegan Parmesan, more sprouts, and chili flakes.
