Vegan Linguine with Onions

Ingredients

  • 2-3 tbsp olive oil
  • 4 medium yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • Big pinch chili flakes
  • Handful cherry tomatoes
  • Handful chestnut mushrooms
  • 1 can navy beans, rinsed well
  • Handful fresh basil, roughly chopped
  • Handful spinach
  • Handful sprouts
  • 1/4 cup vegan butter
  • Sea salt and cracked pepper
  • Vegan Parmesan
  • Linguine pasta

Preparation

  1. Cook pasta and reserve 1/2 cup of pasta water.

  2. Heat olive oil in a large pan over medium heat.

  3. Once the oil is hot, add the onions and cook over medium-low heat for approximately 30 minutes, stirring frequently.

  4. Add garlic to the softened onions and season with sea salt and cracked pepper.

  5. Add mushrooms and 2 tablespoons of vegan butter.

  6. Cook until mushrooms start to soften, then add cherry tomatoes and navy beans.

  7. Cook until heated through, then add spinach, sprouts, cooked pasta, and the remaining 2 tablespoons of vegan butter.

  8. Season again and toss well to combine.

  9. Serve with vegan Parmesan, additional sprouts, and chili flakes.
