Vegan Linguine with Onions
Ingredients
- 2-3 tbsp olive oil
- 4 medium yellow onions, thinly sliced
- 2 cloves garlic, minced
- Big pinch chili flakes
- Handful cherry tomatoes
- Handful chestnut mushrooms
- 1 can navy beans, rinsed well
- Handful fresh basil, roughly chopped
- Handful spinach
- Handful sprouts
- 1/4 cup vegan butter
- Sea salt and cracked pepper
- Vegan Parmesan
- Linguine pasta
Preparation
Cook pasta and reserve 1/2 cup of pasta water.
Heat olive oil in a large pan over medium heat.
Once the oil is hot, add the onions and cook over medium-low heat for approximately 30 minutes, stirring frequently.
Add garlic to the softened onions and season with sea salt and cracked pepper.
Add mushrooms and 2 tablespoons of vegan butter.
Cook until mushrooms start to soften, then add cherry tomatoes and navy beans.
Cook until heated through, then add spinach, sprouts, cooked pasta, and the remaining 2 tablespoons of vegan butter.
Season again and toss well to combine.
Serve with vegan Parmesan, additional sprouts, and chili flakes.
