Linguine with Caramelized Onions and Vegetables
Ingredients
- Linguine
- 2-3 tablespoons olive oil
- 4 medium yellow onions, thinly sliced
- 2 cloves garlic, minced
- Big pinch chili flakes
- Handful cherry tomatoes
- Handful chestnut mushrooms
- 1 can navy beans, rinsed well
- Handful fresh basil, roughly chopped
- Handful spinach
- Handful sprouts
- 1/4 cup vegan butter
- Sea salt and cracked pepper, to taste
- Vegan Parmesan, for serving
Preparation
Cook the pasta and reserve 1/2 cup of pasta water.
Heat olive oil in a large pan over medium heat.
Add onions and cook over medium-low heat for about 30 minutes, stirring frequently.
Add garlic to the softened onions and season with salt and cracked pepper.
Add mushrooms and 2 tablespoons of butter, then cook until mushrooms start to soften.
Add cherry tomatoes and navy beans, then cook until heated through.
Add spinach, sprouts, cooked pasta, and the remaining 2 tablespoons of butter.
Season again and toss well to combine.
Serve with vegan Parmesan, additional sprouts, and chili flakes.
