Linguine with Caramelized Onions and Vegetables

Ingredients

  • Linguine
  • 2-3 tablespoons olive oil
  • 4 medium yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • Big pinch chili flakes
  • Handful cherry tomatoes
  • Handful chestnut mushrooms
  • 1 can navy beans, rinsed well
  • Handful fresh basil, roughly chopped
  • Handful spinach
  • Handful sprouts
  • 1/4 cup vegan butter
  • Sea salt and cracked pepper, to taste
  • Vegan Parmesan, for serving

Preparation

  1. Cook the pasta and reserve 1/2 cup of pasta water.

  2. Heat olive oil in a large pan over medium heat.

  3. Add onions and cook over medium-low heat for about 30 minutes, stirring frequently.

  4. Add garlic to the softened onions and season with salt and cracked pepper.

  5. Add mushrooms and 2 tablespoons of butter, then cook until mushrooms start to soften.

  6. Add cherry tomatoes and navy beans, then cook until heated through.

  7. Add spinach, sprouts, cooked pasta, and the remaining 2 tablespoons of butter.

  8. Season again and toss well to combine.

  9. Serve with vegan Parmesan, additional sprouts, and chili flakes.
