Creamy Avocado Pasta with Herbs

Ingredients

  • Pasta of your choice (e.g., fusilli)
  • 2 ripe avocados
  • 1/4 cup unsweetened almond milk
  • Juice of 1/2 lemon
  • A handful of spinach and parsley leaves
  • 3 cloves garlic
  • 1/2 can sweetcorn
  • A handful of cherry tomatoes
  • 2 tsp nutritional yeast (optional)
  • Sea salt and pepper to taste
  • Basil leaves (optional, for garnish)

Preparation

  1. Boil water on medium heat and cook the pasta until soft.

  2. In a food processor, add the avocado, spinach and parsley leaves, almond milk, garlic, lemon juice, salt and pepper. Add nutritional yeast for a cheesy flavour. The texture should be creamy.

  3. Once cooked, add the pasta to a bowl and mix in with the avocado mixture. Add the sweetcorn and cherry tomatoes.

  4. To finish, add fresh basil and sprinkle with nutritional yeast and pepper.
