Creamy Avocado Pasta with Herbs
Ingredients
- Pasta of your choice (e.g., fusilli)
- 2 ripe avocados
- 1/4 cup unsweetened almond milk
- Juice of 1/2 lemon
- A handful of spinach and parsley leaves
- 3 cloves garlic
- 1/2 can sweetcorn
- A handful of cherry tomatoes
- 2 tsp nutritional yeast (optional)
- Sea salt and pepper to taste
- Basil leaves (optional, for garnish)
Preparation
Boil water on medium heat and cook the pasta until soft.
In a food processor, add the avocado, spinach and parsley leaves, almond milk, garlic, lemon juice, salt and pepper. Add nutritional yeast for a cheesy flavour. The texture should be creamy.
Once cooked, add the pasta to a bowl and mix in with the avocado mixture. Add the sweetcorn and cherry tomatoes.
To finish, add fresh basil and sprinkle with nutritional yeast and pepper.
