Cheesy Penne with Cherry Tomatoes, Spinach, and Broccoli

Ingredients

  • Chickpea penne
  • Cherry tomatoes
  • Spinach
  • Onions
  • Broccoli
  • Plant-based ricotta
  • Olive oil
  • Minced garlic
  • Salt and pepper

Preparation

  1. Steam cherry tomatoes, onion, spinach, and broccoli in a pan with a splash of water until tender.

  2. Add olive oil and minced garlic, then sauté.

  3. Cook the pasta and once done, drain and reserve about 1/3 to 1/2 cup of the pasta water.

  4. Put the penne in the pan with the other ingredients, lowering the heat to a simmer.

  5. Add the ricotta and a little bit of the water at a time, until desired consistency.

  6. Drizzle with olive oil and add salt and pepper.
