Cheesy Penne with Cherry Tomatoes, Spinach, and Broccoli
Ingredients
- Chickpea penne
- Cherry tomatoes
- Spinach
- Onions
- Broccoli
- Plant-based ricotta
- Olive oil
- Minced garlic
- Salt and pepper
Preparation
Steam cherry tomatoes, onion, spinach, and broccoli in a pan with a splash of water until tender.
Add olive oil and minced garlic, then sauté.
Cook the pasta and once done, drain and reserve about 1/3 to 1/2 cup of the pasta water.
Put the penne in the pan with the other ingredients, lowering the heat to a simmer.
Add the ricotta and a little bit of the water at a time, until desired consistency.
Drizzle with olive oil and add salt and pepper.
