Hummus Pasta with Spinach and Sun-Dried Tomatoes

Ingredients

Hummus

  • 1 15 oz can chickpeas
  • 2 tbsp olive oil
  • 3 tbsp aquafaba
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 1/2 tsp paprika
  • Pinch of salt

Pasta

  • 8 oz pasta of choice
  • 1 cup hummus
  • 1 cup spinach
  • 1/4 cup sun-dried tomatoes
  • 1 cup pasta water
  • Salt and pepper to taste

Preparation

  1. In a blender or food processor, combine the hummus ingredients and blend until smooth

  2. Bring a large pot of water to a boil and cook the pasta according to package instructions

  3. Drain the pasta, reserving about a cup of the pasta water

  4. Return the pasta to the pot on medium-low heat and add the spinach and sun-dried tomatoes, mixing until the spinach is wilted

  5. Add the hummus and reserved pasta water, stirring constantly until the desired consistency is reached and add more water if needed

  6. Serve with salt and pepper to taste
