Vegan Tahini Pasta with Spinach and Peas
Ingredients
- 10 oz pasta of choice
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 large onion, diced
- 1 1/2 cups plant-based milk
- 2 tbsp apple cider vinegar
- 2 tbsp tahini
- 1/3 cup flour
- 1 cup green peas
- 2 cups spinach
- Salt and pepper to taste
- Vegan feta, to serve
Preparation
Cook the spaghetti according to instructions on packaging.
Meanwhile, heat the olive oil in a saucepan over a medium heat and cook the garlic and onion for 5 minutes, until softened.
Next, add the plant-based milk, apple cider vinegar, and tahini.
Stir for a few minutes, then add the flour and green peas.
When the sauce thickens, take off the heat and add the spinach and cooked spaghetti.
Season to taste with salt and pepper before serving with vegan feta.
