Hummus Pasta with Spinach and Sun-Dried Tomatoes

Ingredients

Hummus

  • 1 15 oz can chickpeas rinsed and drained
  • 2 tbsp olive oil
  • 3 tbsp aquafaba
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 1/2 tsp paprika
  • Pinch of salt

Pasta components

  • 8 oz pasta of choice
  • 1 cup hummus
  • 1 cup spinach
  • 1/4 cup sun-dried tomatoes
  • 1 cup pasta water
  • Salt and pepper to taste

Preparation

  1. Make the hummus by blending the chickpeas, olive oil, aquafaba, garlic, lemon juice, paprika, and salt until smooth.

  2. Bring a large pot of water to a boil and cook the pasta according to package instructions.

  3. Drain the pasta, reserving about a cup of the pasta water.

  4. Return the pasta to the pot over medium-low heat and add the spinach and sun-dried tomatoes. Mix until wilted.

  5. Add the hummus and the reserved pasta water, stirring constantly until desired consistency is reached. Add more water if needed.

  6. Serve with salt and pepper to taste.
