Vegan Sausage Couscous and Kale Dish

Ingredients

  • 2 vegan sausages
  • 2 spring onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1/2 cup cooked couscous
  • 2 cups kale
  • 1 yellow or orange capsicum
  • 1/4 tsp paprika
  • 1/4 tsp ground cumin
  • Salt and pepper to taste
  • Lemon juice to drizzle
  • Hummus for serving

Preparation

  1. In a large pan, heat the olive oil on a low to medium heat. Add the chopped onion and garlic. Stir and cook for 1-2 minutes. Add the chopped sausage pieces and cook for about 5-8 minutes or until they start to turn brown.

  2. In a separate small pot, heat 1 cup water. Once it starts to boil, add the couscous. Remove from heat and let it sit to soak up the water for about 5 minutes.

  3. Once water is soaked, fluff it up with a fork and add it to the pan with the sausage. Mix through.

  4. Add the kale chopped into bite-sized pieces. Season with the spices, salt and pepper. Mix and add a squeeze of lemon juice.

  5. Divide into two bowls and serve with hummus or a lemony tahini drizzle would also be delicious.

Tips

  1. You can also just add boiling water to a bowl of couscous if you don’t want to cook it on the stove top.
