High Protein Pasta with Vegetables
Ingredients
- 100 grams of lentil pasta
- 150 grams of mushrooms
- 2 garlic cloves
- 100 grams of broccoli
- 100 grams of asparagus
- 2 tbsp of olive oil
- 1 lemon
- 3 tbsp of nutritional yeast
- 2 tbsp of mixed herbs (my mix has green onion, basil, parsley, and cilantro)
- small bunch of fresh parsley
- chili oil to serve
- 1/3 tsp of cayenne
- 1 tsp of salt
Preparation
On medium heat sauté mushrooms and garlic in olive oil
Season with cayenne, salt, and black pepper
Add pasta to the salted boiling water and cook according to the instructions
Chop broccoli and add to the pan with mushrooms
Cook for 2-3 minutes and add chopped asparagus to the same pan
Sprinkle nutritional yeast and mixed herbs over the content of the pan
Pasta should be ready by now
Drain pasta over the sink, reserving a few tablespoons of the cooking liquid
Add the pasta to the veggies with the cooking liquid
Squeeze lemon juice over and add chopped fresh parsley
Taste for seasonings and adjust if needed
Serve with a drizzle of chili oil if desired
