Vegan Egg Mayo

Ingredients

  • 280 g tofu firm or silken, depending on preference
  • 2 tbsp vegan mayonnaise
  • 1/2 tsp black pepper
  • 1 tsp black salt
  • 1 tsp turmeric

Preparation

  1. Chop the tofu into a small cubes then using a fork, lightly mash

  2. Add the tofu to a large bowl along with the vegan mayonnaise, black salt, pepper and turmeric

  3. Mix until combined

  4. Taste and add more salt and/or pepper to taste

  5. Store in the fridge for up to 3 days or enjoy right away!
