Vegan French Bean Salad with Peanuts and Pomegranate
Ingredients
- 750 g fresh or frozen French beans
- 1 pomegranate
- 1/2 can of peanuts
- 1 tbsp sesame
- 1 tbsp sesame oil
- Salt and pepper
- Chilli flakes
Preparation
Blanch the French beans in boiling water for about 2 minutes to keep them crunchy and retain their green color.
Rinse the beans with cold water and pat them dry.
Peel the pomegranate.
In a large salad bowl, combine the blanched beans, pomegranate seeds, peanuts, sesame, sesame oil, salt, pepper, and chilli flakes. Mix everything thoroughly.
