Vegan French Bean Salad with Peanuts and Pomegranate

Ingredients

  • 750 g fresh or frozen French beans
  • 1 pomegranate
  • 1/2 can of peanuts
  • 1 tbsp sesame
  • 1 tbsp sesame oil
  • Salt and pepper
  • Chilli flakes

Preparation

  1. Blanch the French beans in boiling water for about 2 minutes to keep them crunchy and retain their green color.

  2. Rinse the beans with cold water and pat them dry.

  3. Peel the pomegranate.

  4. In a large salad bowl, combine the blanched beans, pomegranate seeds, peanuts, sesame, sesame oil, salt, pepper, and chilli flakes. Mix everything thoroughly.
