Vegan French Toast with Banana and Maple Syrup
Ingredients
- silken tofu
- unsweetened soy, nut, or rice milk
- cinnamon
- nutmeg
- allspice
- whole grain bread
- oil (optional)
- fresh banana slices
- pumpkin seeds
- maple syrup
Preparation
Blend the silken tofu, unsweetened soy/nut/rice milk, cinnamon, nutmeg and allspice until smooth. Add additional milk, if needed.
Soak each slice of whole grain bread in the mixture, one at a time.
Heat a pan with a little bit of oil on low-medium heat. For an oil-free version, omit the oil and use a non-stick pan.
When the pan is warm, add the whole grain bread slices and cook until golden brown and firm on each side, approximately 8 minutes.
Serve with fresh banana slices, pumpkin seeds and maple syrup.
