Vegan French Toast with Banana and Maple Syrup

Ingredients

  • silken tofu
  • unsweetened soy, nut, or rice milk
  • cinnamon
  • nutmeg
  • allspice
  • whole grain bread
  • oil (optional)
  • fresh banana slices
  • pumpkin seeds
  • maple syrup

Preparation

  1. Blend the silken tofu, unsweetened soy/nut/rice milk, cinnamon, nutmeg and allspice until smooth. Add additional milk, if needed.

  2. Soak each slice of whole grain bread in the mixture, one at a time.

  3. Heat a pan with a little bit of oil on low-medium heat. For an oil-free version, omit the oil and use a non-stick pan.

  4. When the pan is warm, add the whole grain bread slices and cook until golden brown and firm on each side, approximately 8 minutes.

  5. Serve with fresh banana slices, pumpkin seeds and maple syrup.
