Vegan Sushi Rolls with Tofu, Cucumber, and Avocado
Ingredients
- Sushi rice
- Nori sheets
- Tofu
- Soy sauce
- Cucumber
- Avocado
- Cooking oil
Preparation
Cook and cool the rice.
In a large non-stick skillet, heat 1 tablespoon of oil over medium heat. Add tofu and sauté untouched for 5 minutes. Flip and cook until crust forms on each side (about 12 minutes total). Add soy sauce and cook until sauce thickens. Coat tofu evenly. Remove from heat.
Place a piece of nori on a flat surface.
Spread an even layer of rice, leaving a 1-inch border on top of the nori sheet.
Chop cucumber and avocado; place on top of rice along with tofu slices.
Roll the sheet and slice into 1-inch pieces.
