Vegan Sushi Rolls with Tofu, Cucumber, and Avocado

Ingredients

  • Sushi rice
  • Nori sheets
  • Tofu
  • Soy sauce
  • Cucumber
  • Avocado
  • Cooking oil

Preparation

  1. Cook and cool the rice.

  2. In a large non-stick skillet, heat 1 tablespoon of oil over medium heat. Add tofu and sauté untouched for 5 minutes. Flip and cook until crust forms on each side (about 12 minutes total). Add soy sauce and cook until sauce thickens. Coat tofu evenly. Remove from heat.

  3. Place a piece of nori on a flat surface.

  4. Spread an even layer of rice, leaving a 1-inch border on top of the nori sheet.

  5. Chop cucumber and avocado; place on top of rice along with tofu slices.

  6. Roll the sheet and slice into 1-inch pieces.

  7. Enjoy!
