Watermelon Salad
Ingredients
- 1kg watermelon, quartered, deseeded and thinly sliced
- Zest of 1 lime
- Handful fresh basil and fresh mint leaves
- Handful pitted black olives, halved
- 50g feta cheese
- Handful pistachio kernels, halved
- Salt and pepper
- For the dressing: 2 tbsp maple syrup, 1/2 tsp cayenne pepper, 2 tbsp olive oil, Juice of 1 lime
Preparation
Arrange the watermelon slices on a plate and season with lime zest, salt and ground pepper
Mix the dressing ingredients together in a small bowl and drizzle over the watermelon
Scatter over the fresh basil and mint and the sliced olives
Crumble over the feta and sprinkle the pistachios
