Watermelon Salad

Ingredients

  • 1kg watermelon, quartered, deseeded and thinly sliced
  • Zest of 1 lime
  • Handful fresh basil and fresh mint leaves
  • Handful pitted black olives, halved
  • 50g feta cheese
  • Handful pistachio kernels, halved
  • Salt and pepper
  • For the dressing: 2 tbsp maple syrup, 1/2 tsp cayenne pepper, 2 tbsp olive oil, Juice of 1 lime

Preparation

  1. Arrange the watermelon slices on a plate and season with lime zest, salt and ground pepper

  2. Mix the dressing ingredients together in a small bowl and drizzle over the watermelon

  3. Scatter over the fresh basil and mint and the sliced olives

  4. Crumble over the feta and sprinkle the pistachios
