Not Just for Summer Watermelon Salad
Ingredients
- Approx. 1kg watermelon
- Zest of 1 lime
- Handful fresh basil and fresh mint leaves
- Handful pitted black olives
- 50g feta cheese
- Handful pistachio kernels
- Salt and pepper
Dressing
- 2 tbsp maple syrup
- 1/2 tsp cayenne pepper
- 2 tbsp olive oil
- Juice of 1 lime
Preparation
Arrange the watermelon slices on a plate and season with lime zest, salt and ground pepper.
Mix the dressing ingredients together in a small bowl and drizzle over the watermelon.
Scatter over the fresh basil and mint and the sliced olives, crumble over the feta and sprinkle the pistachios.
