Gujarati Dal Dhokli Vegetarian Meal

Ingredients

  • 1/2 cup toor dal
  • 1 cup wheat flour
  • Salt as per taste
  • Some red chilli powder
  • Some turmeric powder
  • Some coriander powder
  • Some ajwain
  • 1/2 tsp garam masala
  • Oil
  • 1/2 tsp ghee
  • 2-3 cloves
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 1 piece of cinnamon
  • Some curry leaves
  • Some dry peanuts
  • Some finely chopped tomatoes
  • Some finely chopped green chillies
  • Some finely chopped garlic
  • Some finely chopped ginger
  • 1 tsp jaggery
  • Some finely chopped coriander

Preparation

  1. Rinse and cook the toor dal with turmeric powder and salt until soft and mushy.

  2. In a bowl, mix wheat flour with salt, red chilli powder, coriander powder, ajwain, and garam masala, then add water to form a stiff dough.

  3. Roll the dough into thin sheets and cut into small diamond or square shapes to make dhokli pieces.

  4. Heat ghee in a pan and add cumin seeds, mustard seeds, fenugreek seeds, cloves, cinnamon, and curry leaves; sauté until the seeds splutter and aromatic.

  5. Add dry peanuts and roast until slightly browned, then stir in chopped tomatoes, green chillies, garlic, and ginger; cook until the tomatoes soften.

  6. Add the cooked dal, jaggery, and additional water if needed to adjust consistency; bring to a boil.

  7. Gently add the dhokli pieces to the dal mixture and simmer until the dhokli is cooked through and tender.

  8. Garnish with chopped coriander and serve hot.
