Gujarati Dal Dhokli Vegetarian Meal
Ingredients
- 1/2 cup toor dal
- 1 cup wheat flour
- Salt as per taste
- Some red chilli powder
- Some turmeric powder
- Some coriander powder
- Some ajwain
- 1/2 tsp garam masala
- Oil
- 1/2 tsp ghee
- 2-3 cloves
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- 1 piece of cinnamon
- Some curry leaves
- Some dry peanuts
- Some finely chopped tomatoes
- Some finely chopped green chillies
- Some finely chopped garlic
- Some finely chopped ginger
- 1 tsp jaggery
- Some finely chopped coriander
Preparation
Rinse and cook the toor dal with turmeric powder and salt until soft and mushy.
In a bowl, mix wheat flour with salt, red chilli powder, coriander powder, ajwain, and garam masala, then add water to form a stiff dough.
Roll the dough into thin sheets and cut into small diamond or square shapes to make dhokli pieces.
Heat ghee in a pan and add cumin seeds, mustard seeds, fenugreek seeds, cloves, cinnamon, and curry leaves; sauté until the seeds splutter and aromatic.
Add dry peanuts and roast until slightly browned, then stir in chopped tomatoes, green chillies, garlic, and ginger; cook until the tomatoes soften.
Add the cooked dal, jaggery, and additional water if needed to adjust consistency; bring to a boil.
Gently add the dhokli pieces to the dal mixture and simmer until the dhokli is cooked through and tender.
Garnish with chopped coriander and serve hot.
