Gujarati Style Okra Yogurt Curry
Ingredients
- 2 green chilies
- 1 small piece ginger
- 1/2 cup yogurt
- 2 tablespoons gram flour
- 2 cups water
- 1 tablespoon oil
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- Pinch of asafoetida
- 3 finely chopped garlic cloves (optional)
- Few curry leaves
- 200 grams okra
- Salt to taste
- 1 teaspoon coriander and cumin powder
- Red chili powder to taste
- 1/2 teaspoon turmeric powder
Preparation
Crush 2 green chilies and a small piece of ginger, keep aside
In a mixing bowl, take 1/2 cup yogurt
Add 2 tablespoons gram flour
Mix everything well to avoid getting lumps
Now add 1 cup water and mix it well
Heat 1 tablespoon oil in a pan
Add 1 teaspoon fenugreek seeds
Add 1 teaspoon cumin seeds
Add 1 teaspoon mustard seeds
Add a pinch of asafoetida
Add 3 finely chopped garlic cloves (optional)
Add crushed ginger and chilies
Add few curry leaves
Add 200 grams okra
Add salt to taste
Do not cover with a lid and let it cook on medium to high heat to remove the stickiness of okra
Further add 1 teaspoon coriander and cumin powder
Add red chili powder to taste
Add 1/2 teaspoon turmeric powder
Add besan mixture and add 1 cup water by stirring it continuously
Add salt to taste
Bring it to a boil and turn off the heat
