Gujarati Style Okra Yogurt Curry

Ingredients

  • 2 green chilies
  • 1 small piece ginger
  • 1/2 cup yogurt
  • 2 tablespoons gram flour
  • 2 cups water
  • 1 tablespoon oil
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • Pinch of asafoetida
  • 3 finely chopped garlic cloves (optional)
  • Few curry leaves
  • 200 grams okra
  • Salt to taste
  • 1 teaspoon coriander and cumin powder
  • Red chili powder to taste
  • 1/2 teaspoon turmeric powder

Preparation

  1. Crush 2 green chilies and a small piece of ginger, keep aside

  2. In a mixing bowl, take 1/2 cup yogurt

  3. Add 2 tablespoons gram flour

  4. Mix everything well to avoid getting lumps

  5. Now add 1 cup water and mix it well

  6. Heat 1 tablespoon oil in a pan

  7. Add 1 teaspoon fenugreek seeds

  8. Add 1 teaspoon cumin seeds

  9. Add 1 teaspoon mustard seeds

  10. Add a pinch of asafoetida

  11. Add 3 finely chopped garlic cloves (optional)

  12. Add crushed ginger and chilies

  13. Add few curry leaves

  14. Add 200 grams okra

  15. Add salt to taste

  16. Do not cover with a lid and let it cook on medium to high heat to remove the stickiness of okra

  17. Further add 1 teaspoon coriander and cumin powder

  18. Add red chili powder to taste

  19. Add 1/2 teaspoon turmeric powder

  20. Add besan mixture and add 1 cup water by stirring it continuously

  21. Add salt to taste

  22. Bring it to a boil and turn off the heat
