Indian Bajra Millet Khichdi
Ingredients
- 1 cup half-cooked millet
- 1 cup pre-soaked yellow moong dal
- 2 tablespoons ghee
- 1 teaspoon cumin seeds
- 1/2 teaspoon asafoetida
- 3-4 cloves finely chopped garlic
- 2 finely chopped green chilies
- 1 finely chopped onion
- Salt to taste
- Chopped mixed vegetables (cauliflower, green peas, carrots)
- 1 teaspoon turmeric powder
- 1.5 teaspoons Kashmiri red chili powder
- 1/2 teaspoon garam masala
- Water
- Coriander leaves
Preparation
Heat up the pressure cooker
Add 2 tablespoons ghee
Add 1 teaspoon cumin seeds
Wait for the cumin seeds to crackle
Add 1/2 teaspoon asafoetida
Add 3-4 cloves of finely chopped garlic
Add 2 finely chopped green chilies
Mix well
Add 1 small finely chopped onion
Add salt
Add chopped vegetables: cauliflower, green peas, and carrots
Add 1 teaspoon turmeric powder
Add 1.5 teaspoons Kashmiri red chili powder
Add 1/2 teaspoon garam masala
Mix well
Add 1 cup half-cooked millet
Add 1 cup pre-soaked yellow moong dal
Add 1.5 cups water
Mix well
Add coriander leaves
Close the pressure cooker and cook for 3 whistles
After 3 whistles, open the cooker
Mix again
Plate and garnish with coriander leaves
