Daliya Khichdi with Vegetables

Ingredients

  • 2 tablespoons oil
  • 1 tablespoon ghee
  • 1 cup dalia, pre-soaked in water for 3-4 hours
  • 1/2 cup rice, pre-soaked in water
  • Finely chopped garlic
  • Finely chopped green chilies
  • 1/2 teaspoon asafoetida
  • Chopped onions
  • Chopped carrots
  • Chopped French beans
  • Fresh green peas
  • Chopped cauliflower
  • Chopped capsicum
  • 1 teaspoon turmeric
  • Kashmiri red chili powder
  • Salt to taste
  • 1.5 cups water
  • Coriander leaves

Preparation

  1. In a pressure cooker, heat 2 tablespoons oil and 1 tablespoon ghee

  2. Add finely chopped garlic and green chilies

  3. Add 1/2 teaspoon asafoetida

  4. Add chopped onions, carrots, French beans, cauliflower, and capsicum, along with fresh green peas

  5. Mix everything well

  6. Add 1 teaspoon turmeric and some Kashmiri red chili powder

  7. Mix well again

  8. Add 1 cup pre-soaked dalia and 1/2 cup pre-soaked rice

  9. Mix thoroughly

  10. Add salt to taste

  11. Add 1.5 cups water and stir the mixture

  12. Add coriander leaves

  13. Close the pressure cooker and cook for 3 whistles

  14. Allow the cooker to cool down naturally

  15. Serve the khichdi with coriander leaves as garnish

Tips

  1. Feel free to add any vegetables you like

  2. You may use a mix of dal and rice if preferred

  3. This is a variation of traditional khichdi and can be enjoyed as a nutritious meal
