Daliya Khichdi with Vegetables
Ingredients
- 2 tablespoons oil
- 1 tablespoon ghee
- 1 cup dalia, pre-soaked in water for 3-4 hours
- 1/2 cup rice, pre-soaked in water
- Finely chopped garlic
- Finely chopped green chilies
- 1/2 teaspoon asafoetida
- Chopped onions
- Chopped carrots
- Chopped French beans
- Fresh green peas
- Chopped cauliflower
- Chopped capsicum
- 1 teaspoon turmeric
- Kashmiri red chili powder
- Salt to taste
- 1.5 cups water
- Coriander leaves
Preparation
In a pressure cooker, heat 2 tablespoons oil and 1 tablespoon ghee
Add finely chopped garlic and green chilies
Add 1/2 teaspoon asafoetida
Add chopped onions, carrots, French beans, cauliflower, and capsicum, along with fresh green peas
Mix everything well
Add 1 teaspoon turmeric and some Kashmiri red chili powder
Mix well again
Add 1 cup pre-soaked dalia and 1/2 cup pre-soaked rice
Mix thoroughly
Add salt to taste
Add 1.5 cups water and stir the mixture
Add coriander leaves
Close the pressure cooker and cook for 3 whistles
Allow the cooker to cool down naturally
Serve the khichdi with coriander leaves as garnish
Tips
Feel free to add any vegetables you like
You may use a mix of dal and rice if preferred
This is a variation of traditional khichdi and can be enjoyed as a nutritious meal
