Simple Vegan Chickpea Patties
Ingredients
- 1 tin chickpeas
- 200g carrots, grated
- 1 tsp onion powder or 1/2 onion, diced
- 2 tsp cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp chilli powder
- salt and pepper
- 3/4 cup chickpea flour
- 4 tbsp vegetable oil
Preparation
Drain chickpeas well and dry using a towel or salad spinner.
Squeeze grated carrots in a clean tea towel to remove liquid.
Add chickpeas and carrots to food processor with onion powder, cumin, coriander, cinnamon, chilli powder and salt and pepper.
Pulse until it starts to come together.
Add chickpea flour 1/4 cup at a time, pulsing after each addition (you may not need it all).
When it forms a dough, scoop out and set aside in the fridge to firm up for 30 mins.
Form into patties using a heaped tbsp per pattie.
Heat a frying pan over a medium heat and add oil.
Fry for a few minutes on each side, until golden.
Tips
Perfect served with a side salad or inside a wrap.
