Roasted Chickpea Avocado Toast
Ingredients
- 1 large avocado
- Lime
- Salt and pepper
- 1 can chickpeas
- 1/2 tsp olive oil
- 1/4 tsp garlic and onion powder
- 1/4 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp mild chili powder
- Pinch of turmeric
Preparation
Mash the avocado with lime, salt, and pepper.
Preheat oven to 180C/360F.
Roast the chickpeas in olive oil for 20 minutes until crunchy.
Remove chickpeas, season with garlic and onion powder, cumin, smoked paprika, mild chili powder, and turmeric, then return to oven for a few more minutes to absorb flavors.
Toast bread slices.
Spread the mashed avocado on toast, top with roasted chickpeas, and serve with a squeeze of lime.
