Chickpea Avocado Toast with Spiced Chickpeas
Ingredients
- 1 large avocado
- 1 can of chickpeas
- 1/2 tsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp mild chili powder
- Pinch of turmeric
- Lime
- Salt
- Pepper
- Bread (for toast)
Preparation
Rinse and pat dry the chickpeas.
Mash the avocado with lime juice, salt, and pepper to taste.
Toss the chickpeas with olive oil.
Roast the chickpeas at 180°C/360°F for 20 minutes until crunchy.
Remove from oven and mix with garlic powder, onion powder, cumin, smoked paprika, mild chili powder, and turmeric.
Return to oven for a few more minutes to absorb flavors.
Toast bread slices.
Spread mashed avocado on the toast.
Top with spiced chickpeas.
Serve with a squeeze of lime.
