Spiced Roasted Chickpea and Avocado Toast

Ingredients

  • Bread slices
  • 1 large avocado
  • Lime
  • Salt
  • Pepper
  • 1 can chickpeas
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon mild chili powder
  • Pinch of turmeric

Preparation

  1. Rinse and pat dry the chickpeas.

  2. Mash the avocado with lime juice, salt, and pepper.

  3. Preheat the oven to 180°C/360°F.

  4. Toss the chickpeas with olive oil and roast for 20 minutes until crunchy.

  5. Remove from oven, mix with garlic powder, onion powder, cumin, smoked paprika, mild chili powder, and turmeric, then return to oven for a few more minutes to absorb flavor.

  6. Toast the bread slices.

  7. Serve the roasted chickpeas on top of the toasted bread with the mashed avocado and a squeeze of lime.
