Baked Broccoli Chickpea Nuggets

Ingredients

  • 1 large head broccoli
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup oats
  • 1 tablespoon flaxseed meal
  • 3 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • Pepper, to taste
  • 2 tablespoons olive oil

Preparation

  1. Pulse the broccoli in a food processor until finely chopped

  2. Add everything else and pulse roughly again, leaving the mix a little textured

  3. Shape into nuggets

  4. Coat with a little nutritional yeast and press down for a cheesy crumb, if desired

  5. Spray with oil and bake for 30 minutes at 180 degrees, turning halfway

  6. Serve with your favourite condiments

Tips

  1. Avoid over-pulsing the mixture to prevent it from becoming too smooth like hummus

  2. Hot sauce is recommended for serving to enhance flavor
