Delicious Warm Vegetable Soup

Ingredients

  • 4 cups organic vegetable broth
  • 1 cup whole grains and beans soup mix
  • 1 small sweet potato
  • 1 small yellow onion
  • 2 celery stalks
  • 2 carrots
  • 2 garlic cloves
  • 2 teaspoons turmeric
  • salt and pepper to taste
  • full fat organic coconut milk (use half the can or cream layer)

Optional

  • favorite spice for heat

Preparation

  1. Sauté the onion and garlic in a pot until softened and fragrant

  2. Add the celery, carrots, sweet potato, and whole grains and beans soup mix, cook for a few minutes

  3. Pour in the vegetable broth, turmeric, salt, pepper, and optional spice, bring to a boil

  4. Reduce heat and simmer until vegetables and grains are tender, about 20-30 minutes

  5. Stir in the coconut milk (using the cream layer or half the can), heat through without boiling

  6. Season to taste with additional salt and pepper if needed, and serve warm
